I've got one betting theory that more times than not holds true...
Always take the points in a rivalry game when you're getting 10 or more. More times than not these games are close, and 10 is a pretty healthy spread to cover.
(this is of course assuming the teams are pretty evenly matched, obviously a game like Florida/Florida St. was a huge mismatch and doesn't fall into this category)
