Lunch ideas???

A friend has to make lunch for a bunch of women and needs ideas. Some of the women are picky. A lot don't eat pork, a few don't eat seafood.

I'm trying to help her come up with ideas on what she can bring so everyone eats. So far we have only come up with sandwiches. She doesn't want something super heavy because than they won't want to do work after eating. She sort of thought chili with corn bread, but that was vetoed because of the heaviness.

Help???? Any ideas, whatever you guys come up with I'll run past her.

Well, if they don't want anything really heavy, you could always go with a fancy salad of some sort, some spring mix type greens with various veggies. Have some chopped chicken or something on the side that they can add if they want. Have both a vinagrette type dressing along with a ranch or something like that.

You don't have Trader Joe's up there, do you? If you do, they have a pretty good selection of different finger foods, also they have these cheese bread/crouton things that are great! :drool:

haha,,,makes me think of my bud who works at mcdonalds.

he says he laughs at the people who order like that.
